  1. Glad to see you tempered your charcoal before cooking ,to avoid the flare-up. Cooking on a BBQ is so versatile once you understand how to control the heat. I have even cooked an extra Turkey on a BBQ at Christmas when the guest list expanded and my mate and fellow chef Trevor cooks BBQ’s at the Antartic (he works down there cooking for the British Antartic Survey).
